Sancocho is the national soup of Colombia. Everyone knows it. It is food for everyone. Anyone will have a story to tell you that involves eating sancocho along a river, in a camping place, at the sea or at a huge party in someones garden. Sancocho is easy to make and the recipe is not too strict, allowing many ingredients to be used. It is a great leftover dish and one to enjoy with a lot of people.
You can make three kinds of sancocho:
- Sancocho de pollo (sancocho with chicken)
- Sancocho Trifásico (sancocho with three meats)
- Sancocho de marisco (sancocho with fish)
The other ingredients of sancocho are two kinds of potatoes, one kind that dissolves easily when cooked and the other that stays more firm, then cassave (yucca) root, corn cobs, onion, tomato, coriander, lemon juice and the meat or fish.
Sancocho can be served with fried plantain, rice and/or arepas. You can add spicy ají sauce to the dish or extra lemon juice and extra coriander.
